Yellow Tomato Gazpacho

5 lbs very ripe yellow tomatoes, chopped
2 roasted yellow peppers, peeled, seeded and chopped
1 medium Vidalia onion, chopped about
½ English cucumber, core removed then peeled and chopped
3 stalks celery, chopped
1 tbsp garlic, chopped
¼ cup sherry vinegar
¼ cup sherry
1 tbsp sugar
1 tsp Kosher salt
½ tsp white pepper, ground
¼ cup extra virgin olive oil
1 cup water

Throw all ingredients in blender and puree until smooth. Pour through a strainer and let flavours steep for 8 hours before serving. Season to taste, generous with salt.
